INSTRUCTIONS

Preheat your oven to 450°F and remove butter from the fridge to soften.

*Note: This is your chance to prep: chop your shallots, thyme, and halve your lemons.*

Boil Potatoes

  • Add your potatoes to a large pot of salted water and put it over high heat.
  • Cook at a gentle boil until they soften (~ 20 minutes).
  • Drain the potatoes and dry them well.

*Note: The smaller the potato the better. It helps with cooking, smashing and crisping*

Season Steaks

  • While the potatoes boil, remove your steaks from the fridge and wrap them in a paper towel to dry on a plate.
  • Once dried, season with salt, pepper and garlic powder.

*Note: Seasoning is about feel. Remember you can always add more, not less*

Smash & Roast the Potatoes

  • Place cooked potatoes on a sheet pan coated with Lula Avocado Oil.
  • Use the bottom of a sturdy glass to gently smash each potato to less than 1-inch thick.
  • Drizzle the remaining oil and salt.
  • Cook on the top oven rack until the potatoes are golden and crunchy (~20–25 minutes).

Make the Compound Butter

  • Mix softened butter, chopped thyme & shallots, lemon juice, and vinegar into each other in a bowl.

Cook the Steaks (w. 10 minutes left on potatoes)

  • Heat a heavy-bottomed pan over high heat. 
  • Once the pan is very hot, coat the bottom with Lula Avocado Oil.
  • Sear steaks one side for 4 minutes until a deep crust forms. 
  • Add a tablespoon of butter to the pan and use a spoon to wash your steak in the melted butter.
  • Flip the steak and sear for 3 minutes. Keep spooning butter over the top as it cooks.
  • Remove from heat and let rest on a warm plate for 5 minutes.

Dress Salad

  • Drizzle olive oil over salad, squeeze half lemon, and salt to taste.

*Note: the key is more acid than fat - more lemon than oil.*

Plate

  • Remove the potatoes from the oven and add to the steak plate with a side of salad. Top steak with butter.
  • Season with Maldon Flake Salt and cracked pepper
